Question about key remapping.

If you're remapping the keys, do you have to state what you've remapped them to, or does it matter? I only ask because for some games, like Robotron: 2084, and Sprint 1, I had to remap the keys to be able to actually enjoy the games! XD

So long as you're not remapping more than one button to a key, or more than one key to a button, you should be okay.

No, I'm not doing that. I'm just adjusting the key layout so it's easier to work with. For example, in Sprint 1, I changed the gearshift keys from Z, C, X, M, to A, S, D, F respectively. I'm guessing things like that are fine?

yep, all good, converting keymaps to use with prefered controlers is what key maping is generally intended for and ok here.
