Why I can't select characters in "Wizard Fire/Dark Seal 2" on start screen? I can select only knight. It's bug?

It's a bug. Use AlphaMAME 0.64.3 or apply the fix to the source yourself (look through the AlphaMAME 0.64 thread). No reason why it won't playback on a MAME version that doesn't have the fix.

It's concerning about the protection (not fully emulated). A message referenced to that appears in mame forum, and Mish (the autor of the driver) gives a solution to select characters.

But I dont remember it, it consist in press SHIFT + another key, I believe. Maybe the topic is still at mame forum

That would be pushing P to pause, and using Shift+P to advance through each frame.
